This delicious sauce is the perfect accompaniment for your roasted Turkey, Chicken or Pork. I served it up on Thanksgiving where it was a huge hit. It keeps well in the refrigerator for two weeks and was perfect for dressing up a simple roast pork tenderloin.
This recipe was created for Melissa's Produce Family Baking Challenge.......Grape and Cranberry Sauce
Ingredients
- 1 c. 100% pure grape juice
- 1 c. brown sugar, packed
- zest of 1/2 lemon
- 8 oz. cranberries
- 16 oz. seedless red grapes ( I used Winter Crunch)
- 1 cinnamon stick
- 1 t. fresh thyme leaves
Instructions
- Place grape juice, brown sugar and lemon zest in a large sauce pan over med high heat. Cook and stir until sugar is dissolved, about 5 minutes.
- Add the cranberries, grapes and cinnamon stick. Bring back to a boil, reduce heat to medium and simmer until it starts to thicken. When the cranberries start to pop use a potato masher or wooden spoon to crush the fruit, about 25 minutes. Remove the cinnamon stick. Stir in the thyme and place into a serving bowl to cool.
- Will keep, covered in the refrigerator, for 2 weeks.
