Slow Cooker Chicken Chili
Ingredients
- 3 lg. boneless, skinless chicken breast halves
- 3 cans diced tomatoes with juices
- 3 c. chicken broth
- 1/2 lg. Vidalia onion, chopped
- 1 lg. Anaheim pepper, seeded and chopped
- 1 jalapeno pepper, seeded and chopped
- 1 (15 oz) can of corn, drained
- 2 (15 oz) cans of kidney beans, drained and rinsed
- salt and pepper, to taste
- 2 t. dried Italian Herbs
- 2 t. chili powder
- 1 t. cumin
- 3 cloves garlic, minced
- 1 (8 oz) pkg. cream cheese
Instructions
- Season the chicken with salt and pepper. Place in the slow cooker along with the tomatoes, broth, onion, pepper, jalapeno, corn, beans, Italian hervs, chili powder, cumin and garlic. Cover and cook on low for 8 hrs.
- Remove the chicken and cut into bite size pieces. Return to the slowcooker and stir in the cream cheese, a little at a time, until melted and the chili is creamy looking.
