You would think that this would have been an easy assignment for me but I had such a difficult time figuring out what to share.
It's summertime so perhaps I wanted to share a recipe that is made on the grill like this Beer Butt Chicken or Grilled Chicken Breasts with Strawberry Butter.
One Skillet Chicken and Noodles
Ingredients:
- 1 T. olive oil
- 1 T. butter
- 8 oz. sliced mushrooms
- 1 carrot, scraped and sliced into rounds
- 1 russet potato, peeled and diced
- 1/2 sweet onion, diced
- salt and pepper, to taste
- 1 T. tomato paste
- 1 T. flour
- 2 c. chicken stock
- 2 c. egg noodles
- 1 c. diced or shredded cooked chicken
- 1/2 c. frozen peas
Instructions:
- Melt the butter with the olive oil over medium high heat in a large skillet. Add the onion, carrots, potato and mushrooms. Season with salt and pepper and cook for a few minutes until the crisp tender.
- Add the tomato paste and flour, stirring to coat the vegetables. Add the chicken stock, bring to a boil. Add the noodles, reduce heat to simmer. Cover and cook for anothe 10-15 minutes until the noodles and vegetables are tender.
- Stir in the chicken and peas and cook until heated through. Taste and season with additional salt and pepper, if needed.
