Coyote Ugly Breakfast Pizza #FoodnFlix

Now I know many of us enjoy cold pizza for breakfast but how many of us make a fresh pizza just for breakfast?  Well not just for breakfast, it can be served for brunch or brinner too.

Sourdough pizza crust topped with a sour cream sauce, crisp bacon, shredded Monterey Jack cheese and topped with a sunny side up egg.  Can you say DELICIOUS!!!!


I was inspired to make this breakfast pizza after enjoying a fun night watching Coyote Ugly for our FoodnFlix Club.

To be honest with you, I had no desire to see this film when it came out 20 years ago and I still had no desire to watch it now.  But I ordered it up to join in this month's event.  

I LOVED it!!  What a fun film.  I really thought it was going to be demeaning to women but it was not at all.  Yes, the women dress sexy.  Yes, the women gyrate and dance on the bar, for huge tips.  No, they are not sleazeballs...they are young women working towards their dreams and making the best money they can while doing so.

They take care of each other and they take no guff from anyone.  They work hard and they play hard.  I found myself rooting for each and everyone of them

The film starts with Violet, a small town girl, working in a neighborhood pizza joint.  Violet decides to head out to the big city much to her father's dismay.  Violet hopes to become a songwriter as had her mother before her.  Her mother got married, had Violet and never saw her dream come true.  After her mother passed away Violet determined not to let that happen to her and heads out despite her Father's misgivings.

Things turn bad for Violet nearly immediately when her apartment is ransacked and all her money stolen.  She receives rejection after rejection for her demo tapes, she falls into a relationship without intending to become serious with anyone and she lands a job at a bar called Coyote Ugly where she first finds opposition and eventually finds life long friends.

There is not a lot of food in the movie but there was the pizza parlor and there are lots of breakfasts out after dates and the bar.  So I decided to make and share this Breakfast Pizza in honor of the film.

Breakfast Pizza

Breakfast Pizza

Sourdough pizza crust topped with a sour cream sauce, crisp bacon, shredded Monterey Jack cheese and topped with a sunny side up egg. Can you say DELICIOUS!!!!

Ingredients:

  • 1 recipe sourdough pizza dough
  • 4 T. sour cream
  • 1 T. heavy cream
  • 8 oz. Monterey Jack Cheese
  • 4 slices bacon, diced and cooked nearly crisp
  • 2 eggs

Instructions:

  1. Form the pizza dough into 2 (approx. 10") rounds and place onto parchment paper.
  2. Heat a pizza stone or baking pan in a 475* oven.
  3. Combine the sourcream and heavy cream.  Divide between the pizzas and spread to 1" from the edges.  Sprinkle each with half of the cheese and half of the bacon.  
  4. Transfer one of  the pizza with the parchment onto the heated stone and bake for about 8 minutes.  Crack an egg into the center and let cook until egg is set to your liking, about another 5 minutes for sunny side up.  
  5. Repeat with second pizza.
