Making this complete meal in one casserole ahead of time makes it easy to serve up, clean up and start prepping for your dinner. I threw together some quick sticky rolls to serve with it. I will be sharing that easy peasy recipe very soon.

Tater Tot Breakfast Casserole

Layer upon layer of flavor that can be made the night before and placed in the oven in the morning making it the perfect Holiday Casserole to enjoy after opening gifts Christmas Morning.
ingredients:
- 1 lb. bulk pork breakfast sausage
- 1 small onion, diced
- 1 red pepper, cored and diced
- 2 cloves garlic, minced
- 8 eggs
- 1/2 c. light cream
- salt and pepper, to taste
- 1 (2 lb) package tater tots
instructions:
How to cook Tater Tot Breakfast Casserole
- In a large skillet, over med high heat, cook and crumble the sausage until browned. Add the onion and pepper to the skillet, season with salt and pepper, and continue to cook, scraping up an browned bits stuck to the bottom of the pan, until vegetables are softened.
- Treat a casserole with baking spray. Layer the tater tots onto the bottom of the casserole. Place the sausage mixture in an even layer over the potatoes.
- Whisk together the eggs and cream, season with salt and pepper and pour over the layers in the casserole. Cover with aluminum foil and place in the refrigerator overnight.
- In the morning, bake the covered casserole in a preheated 350* oven for half an hour. Uncover and bake for another half an hour until golden brown. Let rest for a few minutes before cutting and serving.
