While my brother was in town from California, my great nephew Jake moved back to Michigan from Florida. My sister had a get together at her house so that we could all spend some time together. Jake is a great outdoors man. He loves to hunt, fish and hike. He had some line caught cod that he brought home with him and made us fish tacos. They were yummy.
I brought dessert in the form of this amazing Peach and Nectarine Cobbler that was inspired by a recipe in the Costco magazine that comes to your house each month when you are a member.
I used fresh fruit instead of the frozen that they were advertising but, to be honest, this would be really a simple dessert to throw together in a hurry if you had a bag of frozen stone fruit in your freezer. It would save you the time needed to blanch, peel and pit.

Peach and Nectarine Cobbler
Sweet peaches and nectarines combine to make a wonderful base for the tender biscuits that top this cobbler.
ingredients:
- 4-5 peaches, peeled, pitted and diced
- 4-5 nectarines, peeled, pitted and diced
- 1 T. lemon juice
- 4 T. brown sugar, divided
- 1 1/2 t. baking powder
- pinch of salt
- 1 c. flour
- 3/4 c. heavy cream
instructions:
How to cook Peach and Nectarine Cobbler
- Place peaches, nectarines, lemon juice and 2 Tablespoons of the brown sugar in a sauce pan over med high heat. Cook, stirring often, until fruit is tender and soft.
- Place the remaining brown sugar, flour, baking powder and salt in a bowl and mix until combined. Roll out, on a lightly floured surface, to a thickness of about 1/2" and cut into rounds with a 2-3" cookie cutter.
- Place the fruit into an 8" square baking pan that has been treated with baking spray. Place the biscuits on top of the fruit and bake in a preheated 350* oven for 15-20 minutes, until bubbly and the biscuits are golden brown.
