Stone Fruit Salad #OurFamilyTable

August is National Peaches Month.  In this delicious salad you combine peaches with other seasonal stone fruits, almonds and celery.  Add some Greek yogurt dressing and you have a quick, easy and delicious side dish for your next picnic or bbq.

This salad is a riff on Waldorf Salad substituting stone fruit for the apples and almonds for the walnuts.  It is a wonderful change of pace.

Stone Fruit Salad

In this delicious salad you combine peaches with other seasonal stone fruits, almonds and celery. Add some Greek yogurt dressing and you have a quick, easy and delicious side dish for your next picnic or bbq.

ingredients:

  • 1 (6 oz) carton Greek Yogurt
  • zest and juice of 1 small lime
  • 1 T. honey
  • 3 peaches, pitted and sliced
  • 3 plums, pitted and sliced
  • 2 c. sweet cherries, pitted
  • 1 stalk celery, trimmed and diced
  • 1/2 c. sliced almonds
  • fresh mint, if desired

instructions:

How to cook Stone Fruit Salad

  1. Whisk together the yogurt, lime zest and juice, and honey.  
  2. Combine the peaches, plums, cherries, celery, and almonds in a large bowl.  Gently fold the yogurt mixture onto the fruit until coated.  Sprinkle with chopped mint, if desired.

  3. I love the combination of flavors and textures in this salad. crunchy celery and almonds, soft and sweet fruit and then the tangy yogurt, lime and mint dressing. This would be fabulous with so many things.
