Almond Shortbread Skillet #BacktoSchoolTreats

I received product samples from sponsor companies to aid in the creation of the #BacktoSchoolTreats week recipes. All opinions are mine alone.

This is the easiest and most delicious shortbread recipe ever!!!  Tender cookie flavored with almond paste and topped with sliced almonds, the cookie melts in your mouth and the almonds lend a crunchy texture.


Your kids will be thrilled to come home to a slice of this delicious skillet cookie or to open their lunchbox and find a slice alongside their sandwich and fruit.

I was completely unfamiliar with Taylor & Colledge prior to their #sponsorship of this event.  That's amazing to me because they have been in business since 1897.  Of course,  they are based in Brisbane, Australia so that might explain it.  I am happy to have found them the pastes can be used in place of extracts but you need half the amount and the flavor is much more pronounced.  


The batter goes together quickly.  Spread it into a cast iron pan that has been lined with aluminum foil, sprinkle with some almonds and sugar, and bake until golden brown.

Almond Shortbread Skillet

This is the easiest and most delicious shortbread recipe ever!!! Tender cookie flavored with almond paste and topped with sliced almonds, the cookie melts in your mouth and the almonds lend a crunchy texture.
prep time: 10 Mcook time: 35 Mtotal time: 45 M

ingredients:

  • 1 1/2 c. plus 1 T. sugar
  • 1 1/2 sticks butter, melted
  • 2 eggs
  • 1 1/2 c. flour
  • 1/2 t. salt
  • 1/2 t. almond paste (I used Taylor&Colledge)
  • 1/2 c. sliced almonds

instructions:

How to cook Almond Shortbread Skillet

  1. In large bowl of stand mixer, fitted with the paddle attachment, mix together the 1 1/2 cups sugar and butter.  Add the eggs, one at a time, beating after each.  Sift the flour and salt over the creamed mixture, add the almond paste and mix until well combined.
  2. Spread the batter into a cast iron skillet that has been lined with aluminum foil.  Sprinkle the sliced almonds and 1 Tablespoon of sugar over the top of the batter.  
  3. Bake in a preheated 350 degree oven for 30-35 minutes, until golden brown and a skewer inserted removes cleanly.
  4. When cool, lift from pan using the foil.  Remove foil and place onto serving platter.

  3. Shortbread is my all time favorite cookie. I love the idea of flavoring it with almonds and then topping it with almonds. What a cool way to use my cast iron skillet too!
