I'm excited to share this recipe that I found at Southern Living. I love when I can take an ingredient that is normally found in sweet applications and turn it savory.
Once the steak has absorbed all the wonderful flavors from that marinade, it is just a quick toss in the wok with the onion and snap peas.

Beef and Watermelon Stir Fry
prep time: 30 Mcook time: 8 Mtotal time: 38 M
Tender slices of sirloin steak marinaded in Asian flavors, stir fried with onions and sugar snap peas and then tossed with fresh watermelon slices. This is an excellent summer dinner......
ingredients:
- 1 lb. sirloin steak, cut into thin strips
- 3 cloves garlic, minced
- 2 t. cornstarch
- 2 t. cold water
- 2 t. soy sauce
- 1 1/2 t. sesame oil
- 2 T. dry white wine, divided
- 2 T. hot water
- 2 T. hoisin sauce
- salt and pepper, to taste
- 2 T. canola oil
- 1 sweet onion, sliced
- 12 oz. sugar snap peas
- 1 t. ginger paste
- 1/2 baby seedless watermelon, rind removed, cut into strips
- pinch dried crushed red pepper flakes

How to cook Beef and Watermelon Stir Fry
- In large bowl, whisk together the garlic, cornstarch, cold water, soy sauce, sesame oil and 1 T. of the wine. Add the steak slices, toss to coat and let marinate at room temperature for 30 minutes.
- In a small bowl, whisk together the hot water, hoisin and remaining 1 T. of wine. Set aside.
- Heat the oil in a large wok over med high heat. Remove the beef from the marinade and add to the wok, discarding remaining marinade. Season with salt and pepper and brown without stirring for about half a minute, turn and brown other side for about half a minute. Move meat to the sides of the wok and add onions to the center. Stir fry for about 2 minutes until tender, stir in the peas, ginger and the hoisin mixture. Cook and stir for another minute and then bring the meat down into the heat again and stir fry until warmed through about another minute.
- Remove from heat. Stir in watermelon and crushed red pepper flakes. Serve over steamed rice, if desired.
