Beef and Watermelon Stir Fry #FoodieExtravaganza

Tender slices of sirloin steak marinaded in Asian flavors, stir fried with onions and sugar snap peas and then tossed with fresh watermelon slices.  This is an excellent summer dinner......

The Foodie Extravaganza team is celebrating Watermelon today........

This party is being hosted by Caroline of Caroline's Cooking.  The Foodie Extravaganza team is a group of bloggers who celebrate Food Holidays each month.  There is a holiday for nearly every food that you can imagine and this month Caroline asked us to celebrate Watermelon.

Look at these other tasty recipes with watermelon being shared for today's Foodie Extravaganza:
I'm excited to share this recipe that I found at Southern Living.  I love when I can take an ingredient that is normally found in sweet applications and turn it savory.

This dinner is ready in less than 40 minutes and that is only because the beef needs to marinade for 30 minutes.  Of course if you are serving this with a side of steamed rice then the timing is perfect.

Once the steak has absorbed all the wonderful flavors from that marinade, it is just a quick toss in the wok with the onion and snap peas.

Off heat, toss with the watermelon and serve.  You will be so pleasantly surprised at how delicious and comforting this dish is.  Great summertime flavors and a one pot meal that doesn't heat up the house.  Perfect!!

Tender slices of sirloin steak marinaded in Asian flavors, stir fried with onions and sugar snap peas and then tossed with fresh watermelon slices. This is an excellent summer dinner......

ingredients:

  • 1 lb. sirloin steak, cut into thin strips
  • 3 cloves garlic, minced
  • 2 t. cornstarch
  • 2 t. cold water
  • 2 t. soy sauce
  • 1 1/2 t. sesame oil
  • 2 T. dry white wine, divided
  • 2 T. hot water
  • 2 T. hoisin sauce
  • salt and pepper, to taste
  • 2 T. canola oil
  • 1 sweet onion, sliced
  • 12 oz. sugar snap peas
  • 1 t. ginger paste
  • 1/2 baby seedless watermelon, rind removed, cut into strips
  • pinch dried crushed red pepper flakes

instructions:

How to cook Beef and Watermelon Stir Fry

  1. In large bowl, whisk together the garlic, cornstarch,  cold water, soy sauce, sesame oil and 1 T. of the wine.  Add the steak slices, toss to coat and let marinate at room temperature for 30 minutes.
  2. In a small bowl, whisk together the hot water, hoisin and remaining 1 T. of wine.  Set aside.
  3. Heat the oil in a large wok over med high heat.  Remove the beef from the marinade and add to the wok, discarding remaining marinade.  Season with salt and pepper and brown without stirring for about half a minute, turn and brown other side for about half a minute.  Move meat to the sides of the wok and add onions to the center.  Stir fry for about 2 minutes until tender, stir in the peas, ginger and the hoisin mixture.  Cook and stir for another minute and then bring the meat down into the heat again and stir fry until warmed through about another minute.
  4. Remove from heat.  Stir in watermelon and crushed red pepper flakes.  Serve over steamed rice, if desired.
