Many of you know that I raise laying hens. I currently have seven of them. One of them is nearly 12 years old. She doesn't lay anymore and the others are in a dry spell. I am so happy that when I don't have eggs from my ladies I know that I can still get healthy, premium eggs from the grocers dairy case by looking for the Eggland's Best label.

Pumpkin Banana Bread
prep time: 10 minscook time: 1 hourtotal time: 1 hours and 10 mins
Tender, moist and lightly spiced, this banana pumpkin bread is perfect with coffee in the morning or with a cup of hot cider for an afternoon snack.
ingredients:
4 c. flour
4 t. baking powder
3 t. ground cinnamon
2 t. ground ginger
2 t. salt
2 c. pumpkin puree
4 eggs
1 c. sugar
1 c. brown sugar, packed
3 small, very ripe bananas
3/4 c. canola oil
instructions:
Combine flour, baking powder, cinnamon, ginger, salt and baking soda in a bowl.
In large bowl of stand mixer, fitted with the paddle attachment, beat the pumpkin, eggs, sugars, bananas and oil until smooth. Turn the speed to low and gradually add the flour mixture until combined.
Divide the batter between 2 loaf pans that have been treated with baking spray. Bake in a preheated 350* oven for about an hour, until a skewer inserted removes cleanly.
Let cool in the pans on a wire rack for 15 minutes before removing the loaves from the pan to the rack to finish cooling.
