Southwest Chicken Burritos and Mango Salsa

I was planning on making guacamole to have with our margaritas before dinner but when I got to the point where I was adding the avocados I found that they had turned on me.  So then I was just going to have plain old salsa when I noticed that I still had a mango in the fridge.  I added the mango to my salsa along with some honey, lime juice and the juice of a blood orange.  Delicious.


I chopped up a tomato and finely diced a jalapeno.


Added some onion and garlic.
Got ready to put in the avocado and oops...avocado gone bad!!



But I had a mango so I diced that up
Added some cilantro, honey, lime juice and the juice of a blood orange.


Pretty and Delicious.

Mango Salsa
1 roma tomato, diced
1 jalapeno, seeded and minced
1/2 small onion, diced
2 cloves garlic minced
3 T. cilantro, chopped
1 mango, diced
1 T. honey
juice from 1/2 lime
juice from 1 blood orange
salt to taste

Mix all ingredients in a large bowl.  Taste and add more salt if needed.  Serve with Tortilla Chips.


We enjoyed the salsa, chips and margaritas with our friends, Vicki and Dave, who had stopped by on the way to a surprise birthday party.  While they were visiting Greg arrived for dinner so we had an impromptu gathering that was very enjoyable. Vicki and Dave ended up staying longer than they had originally planned and then had to stay even longer because they had to make sure that they did not arrive the same time as the birthday boy and ruin the surprise.


For dinner I served Southwest Chicken Burritos.

Southwest Chicken Burritos
1 1/2 c. shredded cooked chicken
1 c. cooked rice
1 (15 oz) can black beans, rinsed
1/2 red bell pepper, diced
3 green onions. white and light green parts sliced
2 t. chili powder
1 t. cumin
1 t. garlic powder
1 t. salt
2 c. shredded mexican blend cheese
10 (8") flour tortillas 
Sour Cream

Mix all ingredients and half of the cheese in a large bowl.  Place tortillas in the microwave on high for 30  seconds so that they become pliable.  Place a dollop of filling in the center of each tortilla and fold in one side, both ends and then the last side.  Place folded side down in a 9x13" baking dish.  Sprinkle with the remaining half of the cheese.  Bake at 350* for 20-30 minutes, until heated through. Serve with sour cream.
