Apple Muffins with Strudel Topping
2 c. unbleached all purpose flour
1 t. baking powder
1/2 t. baking soda
1/2 t. salt
1/2 c. butter, softened
1 c. sugar
2 eggs
1 t vanilla
1/4 c. milk
1 large apple, peeled, cored and chopped
1/3 c. brown sugar
1 T. flour
1/4 t. cinnamon
1 1/2 T. butter
Combine dry ingredients into a small bowl and set aside. Cream the butter and sugar until light and fluffy. Add the eggs and vanilla. Gradually incorporate the dry ingredients. Add milk and mix until combined. Fold in the apples and place batter in a muffin tin sprayed with baking spray or lined with muffin liners.
Place brown sugar, flour, cinnamon and butter in a food processor and pulse until crumbly. Sprinkle topping over muffin batter.
Bake at 375* for 20 minutes or until a toothpick inserted in center comes out clean.
