These quick and easy muffins are a great way to use up those over-ripe bananas that are sitting on your counter.

Stacy of Food Lust People Love invites us on the last Monday of each month to join her in sharing muffin recipes.   Muffins are like the perfect food.  They can be breakfast or a snack.  They are quick and easy to make.  They are portable for when you are on the go or a perfect addition to a leisurely cup of coffee.

Another great thing about these muffins is that they are even better the following day, like all baked goods containing bananas  Feel free to add nuts.  I love nuts with bananas but my husband is not a fan so I left them out.

Banana Oatmeal Muffins

Banana Oatmeal Muffins

These quick and easy muffins are a great way to use up those over-ripe bananas that are sitting on your counter.

Ingredients

  • 1 1/2 c. flour
  • 1 c. rolled oats
  • 1/2 c. sugar
  • 2 t. baking powder
  • 1 t. baking soda
  • pinch of salt
  • 1 egg
  • 3/4 c. milk
  • 1/3 c. canola oil
  • 1 t. vanilla
  • 2 very ripe bananas, mashed

Instructions

  1. Whisk together the flour, oats, sugar, baking powder, baking soda, and salt in a large bowl. Make a well in the center and set aside.
  2. Whisk together the egg, milk, oil, vanilla, and bananas. Pour into the well and mix with a wooden spoon just until combined.
  3. Divide the batter into 12 muffin cups that have been treated with baking spray.
  4. Bake in a preheated 400* oven for 20 minutes, until golden brown and a skewer inserted into the center, removes cleanly.

  1. I used to make banana nut muffins when I had kitchen duty in our co-op in college. These look beautiful, such a gorgeous color, and I really like the addition of the oats!
