Refrigerated pizza dough makes this quick and easy breakfast ready in less than 30 minutes.  Your family will love having this pizza to start their day.

My brother and his wife are visiting from California this month. I like to find different breakfast foods to serve other than the typical bagels, toast, cereal, and eggs.  This was a scrumptious way to surprise them.

Blackberry Breakfast Pizza

This pizza sauced with crushed blackberries, covered with the cheeses and sprinkled with additional blackberries makes a unique, fun, breakfast treat.

Ingredients

  • Refrigerated Dough for one thin-crust pizza
  • 1 T. olive oil
  • 1 c. blackberries, divided
  • 1 c. shredded Italian Cheese blend
  • 1 c. shredded Mozzarella Cheese
  • 3/4 c. Ricotta Cheese
  • salt and pepper, to taste
  • 5-6 basil leaves, chopped or torn, for garnish

Instructions

  1. Place the dough onto a cookie sheet, spreading with your fingers to cover the pan.
  2. Drizzle with the olive oil and use a pastry brush to cover the dough, leaving a 1" border at the edges.
  3. Use a fork to smash half of the blackberries and spread them on the dough, leaving a 1" border.
  4. Sprinkle the blackberry sauce with the shredded cheese and then add dollops of the ricotta cheese. Sprinkle with the blackberries and season with salt and pepper.
  5. Bake in a preheated 450* oven for 10 minutes until crust is golden brown and cheese is melted and bubbly. Remove from oven and sprinkle with the basil before serving.
