All Bran Bud Muffins #MuffinMonday

These heart healthy muffins are delicious and a perfect grab and go breakfast.  I made them in the shape of hearts because not only are they good for you but Valentine's Day is right around the corner and these would be the perfect treat for your sweet.

All Bran Bud Muffins

We got home from our vacation late on Friday night.  When we awoke on Saturday there wasn't much in the house so I decided to make up a small batch of muffins starting with All Bran Buds.  I made a small batch because there was only a scant 3/4 cup of cereal left in the bottom of the box.

They were perfect with my coffee and filled me up so I had some self control when I hit the grocery store.

All Bran Bud Muffins

All Bran Bud Muffins

These heart healthy muffins are delicious and a perfect grab and go breakfast.

Ingredients

  • 3/4 c. All Bran Bud Cereal
  • 1/2 c. + 2 T. flour
  • 1/4 c. sugar
  • 1/2 T. baking powder
  • pinch of salt
  • 1/2 + 2 T. milk
  • 1 egg
  • 2 T. canola oil

Instructions

  1. Place the all bran bud cereal in a food processor or blender and pulse until fine crumbs are formed.
  2. Place into a bowl with the flour, sugar, baking powder and salt. Whisk together and form a hole in the center.
  3. Pour the milk, egg and oil into the hole and mix just until incorporated.
  4. Divide between a six cup muffin pan that has been treated with baking spray.
  5. Bake in a preheated 400* oven for 20 minutes.
