Lemon Loaf Cake #LemonWeek

This moist, bright, and tender cake is baked up in a loaf pan and topped with a light, sweetly tart glaze.  it is perfect at your next brunch or afternoon tea as well as after dinner as dessert.

My recipe today was baked in a loaf pan that had been treated with baking spray provided by La Tourangelle.  This baking spray is different than others I have used as it sprays on clear instead of white.  I was concerned about that but needn't have been because it came right out of the pan beautifully.

I served this up to my nephew, Ryan,  and his girlfriend, Gabby,  when they were taking a CPL course from Frank.

The rest of the loaf was sliced and topped with mixed berries and whipped cream and served as dessert after dinner.  The recipe can be found in this post.

Lemon Loaf Cake

Lemon Loaf Cake

This moist, bright, and tender cake is baked up in a loaf pan and topped with a light, sweetly tart glaze. it is perfect at your next brunch or afternoon tea as well as after dinner as dessert.

Ingredients

Cake
  • 1 1/2 c. flour
  • 1 1/2 t. baking powder
  • zest and juice from 1/2 lemon
  • pinch of salt
  • 1 stick butter, room temperature
  • 1 c. sugar
  • 2 eggs
  • 1 t. vanilla
  • 1/2 c. buttermilk
Syrup and Glaze
  • Zest and Juice of 1 lemon
  • 1 c. + 3 T. powdered sugar
  • 1 T. milk

Instructions

Cake
  1. Combine the flour, baking powder, lemon zest and salt. Set aside.
  2. In large bowl of stand mixer, fitted with the paddle attachment, cream the butter and sugar until light and fluffy.
  3. Turn speed to low and add the eggs, one at a time, mixing well after each. Stir in the vanilla and lemon juice. Increase speed to medium and mix until well combined.
  4. Return mixer to low speed and add 1/3 of the reserved flour mixture, followed by 1/2 of the buttermilk, mixing until just combined. Follow with another third of flour, the remaining buttermilk and finish with the remaining flour, beating just until incorporated.
  5. Pour batter into a loaf pan that has been liberally treated with baking spray and bake in a preheated 350* oven for 50-60 minutes, or until a skewer inserted removes cleanly and cake is golden brown.
  6. Allow cake to cool in pan for 15 minutes. Meanwhile remove and reserve 1 T. of the lemon juice. Mix the remaining juice with 3 Tablespoons of powdered sugar, forming a syrup. Remove cake to a cooling rack and brush with the syrup while still warm, allowing the syrup to soak into the cake. Leave on rack until completely cooled.
  7. Whisk together the remaining lemon juice, powdered sugar and milk to create a glaze. Pour this glaze over the cooled loaf cake and garnish with the lemon zest. Allow glaze to set before serving.
