This meatloaf, made in a crockpot, is perfect for your next party. It makes enough to feed a crowd, bakes in the slow cooker while you are busy preparing for company and....it is scrumptious.
This meatloaf cooks right on the foil in the slow cooker then gets lifted out by the foil, placed onto a sheet pan and, after adding the glaze, goes under the broiler for a bit. Pair it with some of the other dishes being shared today or take it with you to your next potluck.
This is going to be a busy week for me as I prepare for our trip to Cabo. We leave next Saturday and this is the first dive trip that we have been on since right before COVID stopped the world. I am very excited.
Today Frank has our nephew Ryan and his girlfriend here for a CPL class. Tomorrow we are having a neighborhood gathering, fingers crossed that the weather is nice. Monday is our Anniversary. 30 years of marital bliss!!! I can't believe how very blessed I have been to have Frank in my life. We are trying a new to us restaurant that we've heard good things about.
Wednesday is Frank's birthday but since we have choir practice we are going to wait and have a Cumpleaños Feliz Fiesta on Cinco de Mayo. Four of our kids and their families can be here that night. The Teen has to work and the eldest son lives in VA but both of them are going to Cabo with us so it works out perfectly.
Friday I am packing......woohoooooo. Our flight is at 6 am so we need to leave here about 2 am....early to bed for us.

Crockpot Meatloaf
This meatloaf, made in a crockpot, is perfect for your next party. It makes enough to feed a crowd, bakes in the slow cooker while you are busy preparing for company and....it is scrumptious.

Ingredients
- 2 lbs. ground beef
- 1 onion, finely minced, divided
- 2 c. herb seasoned stuffing mix
- 1 1/3 c. milk
- 2 eggs
- 1 1/2 c. ketchup
- 1/4 c. brown sugar
- 1 T. mustard
- 2 t. cider vinegar
- salt and pepper, to taste
Instructions
- Combine 2 Tablespoons of the minced onion with the ketchup, brown sugar, mustard, vinegar. Season with salt and pepper. Set aside.
- In large bowl, using clean hands combine the ground beef, remaining onion, stuffing mix, milk, eggs, salt, pepper and 2 Tablespoons of the ketchup mixture. Shape into an oval and place into the crock of a slow cooker that has been lined on the bottom and up the sides with 2 layers of aluminum foil that have been treated with cooking spray.
- Cover and cook on low for 6-8 hrs.
- Carefully lift out the meatloaf, using the foil and place onto a baking sheet. Cover with the reserved glaze and place under the broiler until sticky and bubbly.

Meatloaf looks delicious, I will have to try this. Love the weekly menu. The menu for today looks wonderful. All will enjoy it.
