Banana Cake with Chocolate Frosting #ImprovCookingChallenge

This is, hands down, the best banana cake you will ever make.  Tender and light with no spices.  Just  a touch of vanilla and all that glorious banana flavor.

I don't know about you but I always seem to have bananas that sit on the counter until they are over ripe.  I don't sweat it.  I just grab them and plop them into the freezer.  No bags, no peeling, no work at all.

When I get 2 or 3 of them I pull them out and bake up some deliciousness.  Sometimes they turn up in breakfast like in these Soft Baked Banana Oatmeal Bars.  Most often they turn into muffins.  Maybe mixed with Chocolate and Coconut, Craisins with Streusel Topping, or Nutella.  Often the become smoothies maybe mixed with Honey and Oats or Orange and Creme.

And then, like today, they get turned into desserts.  Fritters are always popular as are Bundt cakes ot this simple cake I am sharing with you today.

I actually made 2 banana cakes in disposable pans so that I could take them to be part of the dessert offerings at our Parish Fish Fry.  So that took care of the banana part of the challenge....now for the chocolate.

I went into the pantry to pull out some baking cocoa to make my go to cream cheese frosting.  That's when I spied 2 of those premade canisters of frosting sitting on the shelf.  One chocolate and one vanilla.  So I cheated and used them to frost these cakes and share the chocolate frosted one in this challenge.

Banana Cake

Banana Cake

This is, hands down, the best banana cake you will ever make. Tender and light with no spices. Just a touch of vanilla and all that glorious banana flavor.

Ingredients

  • 1 1/2 sticks butter, room temperature
  • 2 c. sugar
  • 3 eggs
  • 2-3 large over ripe bananas
  • 1 1/2 t. vanilla
  • 3 1/3 c. cake flour
  • 1 1/2 t. baking powder
  • 1 1/2 t. baking soda
  • pinch of salt
  • 3/4 c. buttermilk

Instructions

  1. In large bowl of stand mixer, fitted with the paddle attachment, cream together the butter and sugar until light and fluffy.  Add the eggs, one at a time, beating well after each.  Beat in the bananas and vanilla.
  2. Sift together the flour, baking soda, baking powder and salt.  Turn the mixer speed to low and  gradually add some  of the flour mixture, followed by some of the buttermilk until well blended.
  3. Pour batter into a 9x13" baking pan that has been treated with baking spray and bake in a preheated 350* oven for about an hour, or until a skewer inserted in the center of the cake removes cleanly.
  4. Let cool completely in pans on wire rack before covering with frosting of your choice.

  1. This may be the recipe I've been waiting my whole life for! I just need to buy cake flour and buttermilk. LOL Thanks for sharing it!

    1. You can use all purpose flour, reduce amount to 3 cups. Place 1 Tablespoon of lemon juice and milk to make 3/4 cup and that will replace the buttermilk.

  3. I love the white icing idea with banana cake. I freeze bananas and use often for banana bread.

  4. I too freeze bananas and cheat my hubby in eating them by adding it to paratha, cakes, pancakes etc. I love this cake recipe, its so tender and moist, with my next batch of frozen bananas will try this recipe.

  5. I use frozen bananas for smoothies and smoothie bowls. I need to try this delicious cake. Even if it is store-bought icing, that's ok for me. The cake looks divine. Score me a slice please.
