Roasted Chicken with Greek Salsa
Ingredients
- 2 (6-8 oz) chicken breasts
- 1 T. olive oil
- salt and pepper to taste
- 1/4 lemon, cut into 2 wedges
- 4 small new potatoes, halved
- 1 t. olive oil
- 2 oz. feta cheese, crumbled
- half pint grape tomatoes, halved
- 1 beet, roasted, peeled and diced
- 10-12 Kalamata olives, pitted and halved
- 5-6 sprigs parsley, stemmed and chopped
- juice of 1/4 lemon
- 2 T. olive oil
- leaves from 2-3 stems oregano
Instructions
- Heat 1 Tablespoon olive oil in a cast iron or oven safe skillet over med high heat. Season the chicken breast with salt and pepper. When oil is hot, place the chicken top side down into pan and sear until browned. Turn the chicken over, squeeze the juice from 2 lemon wedges over the chicken and add the lemon wedges to the pan.
- Toss the potatoes with the 1 teaspoon olive oil, season with salt and pepper and scatter in the pan with the chicken breasts. Place in a preheated 450* oven for about an hour, until an internal temperature of 165* registers.
- While chicken bakes combine the cheese, tomatoes, beets, olives, parsley, lemon juice, olive oil and oregano in a bowl. Refrigerate until ready to serve.
- When chicken is done plate and top with the salsa. Serve along with the roasted potatoes.
