Bacon Ranch Potatoes
Ingredients
- 6 strips, thick cut bacon, diced
- 2-3 lbs. small red new potatoes, quartered
- 1 (8oz) pkg cream cheese, room temperature
- 1 (10 oz) can cream of potato soup (any cream soup will do)
- 1/4 c. milk
- 1 envelope ranch dressing mix
Instructions
- Cook the bacon over med high heat until crisp. Place onto a paper towel lined plate to drain reserving 1 Tablespoon of the drippings. Set aside.
- Place the cream cheese, soup, milk, reserved bacon drippings and dressing mix in the small bowl of a stand mixer, fitted with the paddle attachment. Mix on low speed until milk is incorporated, increase speed and mix until combined.
- Place the potatoes in the crock of a slow cooker. Add soup mixture and stir to combine. Sprinkle with the bacon and cook, covered on low for 8 hrs or high for 4 hrs. until potatoes are fork tender.
