Bacon Ranch Potatoes


I served these up for a Christmas Eve Brunch with our children. I was able to put them on in the morning, clean up the mess and have plenty of time to relax and get prepared for our celebration.  I love the fact that with the slow cooker you can make things ahead of time, often the night before, so that clean up is all done early and out of the way.

I find my slow cooker an invaluable kitchen tool, especially on holidays when you need the oven for other things.  Slow cookers are also great on those days when you are gone for work or running errands and won't get home until dinner time.  Nothing is better than walking into a house after a long day that smells delicious.  All you have to do is set the table, pour a glass of wine and have a seat.

Slow cookers are also my go to when it is steamy outside and I don't want to turn on the oven.  This recipe would be a perfect side dish for whatever you are putting on the grill in the heat of the summer.

I found this recipe at Taste of Home, originally submitted by Lynn Ireland.  I adapted it only slightly, omitting the scallions as I didn't have any on hand.

Bacon Ranch Potatoes

Cheesy potatoes seasoned with ranch dressing mix couldn't be easier or more delicious. Being cooked in the slow cooker means you can enjoy these year round.

Ingredients

  • 6 strips, thick cut bacon, diced
  • 2-3 lbs. small red new potatoes, quartered
  • 1 (8oz) pkg cream cheese, room temperature
  • 1 (10 oz) can cream of potato soup (any cream soup will do)
  • 1/4 c. milk
  • 1 envelope ranch dressing mix

Instructions

  1. Cook the bacon over med high heat until crisp.  Place onto a paper towel lined plate to drain reserving 1 Tablespoon of the drippings.  Set aside.
  2. Place the cream cheese, soup, milk, reserved bacon drippings and dressing mix in the small bowl of a stand mixer, fitted with the paddle attachment.  Mix on low speed until milk is incorporated, increase speed and mix until combined.  
  3. Place the potatoes in the crock of a slow cooker.  Add soup mixture and stir to combine.  Sprinkle with the bacon and cook, covered on low for 8 hrs or high for 4 hrs. until potatoes are fork tender.
