Curried Chicken Muffins #FoodnFlix #MuffinMonday

These incredible muffins are chock full of flavorful chicken curry and sauteed onions.  They are perfect for in the lunch box or as an after school snack to stave off the Hangries until dinner time.


I was inspired to make these for Muffin Monday after watching the film Nina's Heavenly Delights.

This month's film for FoodnFlix was Nina's Heavenly Delights.  This film was chosen by the leader of our group, Heather of All Roads Lead to the Kitchen.  Heather tells why she chose this film and how you can join in the fun in her announcement post.


Nina has been estranged from her family for 3 years. She returns home upon her father's death to learn that he left her his Indian restaurant that he half owns with Nina's best childhood friend.  This movie is set in Scotland.  It was originally released in 2006.  I had never heard of it prior to this.

I had a hard time locating the film.  The library did not have it, nor did Netflix or Amazon Prime.  Amazon had a copy for sale but I had no interest in buying the movie.  I finally found it On Demand on my smart tv. I ordered up a 48 hr. rental for $4.

The night I watched this my daughter got the flu, so to be fair to the movie I was very distracted while watching. There were some beautiful food scenes and I loved that the Father's spirit was with his family throughout the film.

The gist of the story is that Nina and her business partner, Lisa, try to save the restaurant from financial ruin by entering Nina into a curry competition.   This becomes complicated as Nina's ex fiance is also in the competition.  To further complicate matters, Nina and Lisa fall in love and are trying to deal with the concept.

As I said, I was very distracted during the viewing.  I had intended to go back and watch it again but my 48 hrs. expired and the movie was not important enough to me to spend another $4.


I was digging through Curry recipes when I came across this one for Curried Chicken Muffins from Food.com.  Muffin Monday was coming up and I was excited to be able to kill two birds with one stone, especially since I am on vacation this week.

That's right, as you are reading this post I am soaking up the sun and sea in Cozumel.  I made these muffins the day before I left and Frank and I enjoyed them for lunch.  They were wonderful.  The remaining muffins are in the freezer for us to enjoy when we get home.


The dough is very stiff, you divide it between 12 muffin cups and then top it with sauteed onions before baking.  


These are not light, fluffy muffins.  These are dense, hearty muffins.  They are a meal and perfect for lunch.  The author of the original recipe said they were perfect for picnics. I would agree and look forward to making these to share come Music in the Park during the summertime.


So while I wasn't crazy about the film, I don't regret having watched it.  After all, anything that inspires such a great recipe is worthwhile.

Curried Chicken Muffins

These incredible muffins are chock full of flavorful chicken curry and sauteed onions. They are perfect for in the lunch box or as an after school snack to stave off the Hangries until dinner time.

ingredients:

  • 1 T. olive oil
  • 1 lg. sweet vidalia onion, thickly sliced
  • 3 chicken boneless, skinless chicken thighs, chopped into small dice
  • 2 T. green curry paste
  • 2 1/4 c. flour
  • 3 t. baking powder
  • pinch of salt
  • 1/2 c. canola oil
  • 2 eggs, lightly beaten
  • 2 T. lemon juice
  • 2 T. chopped cilantro leaves

instructions:

How to cook Curried Chicken Muffins

  1. Heat half the oil in a skillet over med high heat, add the onions and a splash of water.  Cook, stirring until softened and translucent but not browned.  Remove to a cutting board.  Reserve 3/4 of the onion rings for topping the muffins.  Chop the remaining onions to add to muffin batter.  
  2. In the same pan, heat the remaining olive oil over med high heat.  Add the chicken and cook until no longer pink, stir in the curry paste and cook a moment longer.  Remove from heat and let cool.
  3. In a large bowl, sift together the flour, baking powder and salt.  Make a well and add the onions, canola oil, eggs and curried chicken.  Mix until incorporated.
  4. Divide the batter between a 12 cup muffin pan that has been generously treated with cooking spray.  Top the muffins with the reserved onion rings and bake in a preheated 375* oven for 20 minutes.
