I was fortunate to receive two bottles of wine from Bending Branch Winery. Bending Branch Winery is located near Comfort, Texas. They offer winery tours and wine tasting. They also set up at the Pearl Farmers Market, have a tasting room in the Comfort Historic District and have a private lounge for the exclusive use of members of their wine club.
I am anxious to discuss these wine with the other members and find out what wines they tasted and what they thought. Cam's Preview Post explains this a little bit more. Bottom line is we are all meeting up at 11 AM ET today to chat on Twitter. You can join in the fun by following #WinePW.
To be honest, it never even occurred to me that Texas made wines, let alone that they are one of the oldest wine growing regions in the USA having planted vines more than a hundred years before Virginia and California. (Source:Wikipedia).
The first wine that I opened was a Petite Sirah. Petite Sirah, also known as Durif grapes, came to be when a cross of Syrah pollen germinated a Peloursin plant. I paired this wine with a Steak Fajita Chili. This wine paired nicely with the dinner and was very drinkable on it's own as well.
The second bottle was a grape with which I was unfamiliar, Tannat. Tannat grapes originated in Basque, France right near the border of Spain. It creates wines that are deep, dark and dry. I had planned on making a special dinner to go with this wine.
Then, life happened. It was one of those crazy days where I had been running like a chicken with my head cut off. I had gone non stop from the minute my feet hit the floor and it was nearly dinnertime when I walked through the door. I opened my refrigerator and saw a pork tenderloin. This was good because Pork Tenderloin cooks up quickly and is always delicious.
Frank went into the wine fridge and asked if I would like a glass of wine while I prepared dinner. He was going through my choices when he mentioned the Tannat. Inspired I asked him to open the bottle and I went into the cupboard thinking I would season the pork tenderloin with cumin and chili powder. I spied a jar of taco seasoning and pulled it off the shelf, coated the tenderloin and set it aside for a few minutes while I started the rice. I went into the refrigerator for some chicken stock to make the rice and spied a container of mango salsa. Perfect.

Taco Seasoned Pork Tenderloin with Mango Salsa Rice

Pork Tenderloin coated in taco seasoning and roasted to a perfect, juicy, tenderness served with a side of Mango Salsa Rice.
ingredients:
- 1 pork tenderloin
- 1 packet taco seasoning mix
- 1 c. rice
- 1 T. canola oil
- 2 cloves garlic, minced
- 1 1/2 c. chicken stock
- 1/4 c. mango salsa
instructions:
How to cook Taco Seasoned Pork Tenderloin with Mango Salsa Rice
- Trim all fat and silver skin from the pork tenderloin. Rub the taco seasoning over it. Place onto a baking sheet and set it aside to come to room temperature.
- Place the oil in a saucepan over med heat. Add the rice and garlic. Stir and cook until the rice is coated and starting to brown. Add the chicken stock and salsa. Bring to a boil, reduce to a simmer, cover and let cook until stock is absorbed and rice is tender. Remove from heat and let set for 5 minutes. Fluff with a fork and serve.
- Place the tenderloin in a preheated 425* oven. Roast for 15-20 minutes, until internal temperature is 145*. Let rest for 5 minutes before slicing.
- Serve with the Mango Rice.

ReplyDeletePork tenderloin with taco spices has me salivating for sure! Curious about the tannat -- those can be quite tannic when 100%. Was it fairly approachable?
ReplyDeleteIt was, I was unable to find much information on the wine itself so I'm not sure if it was a blend or 100%. The website only listed tannat but not the amount. 14% alcohol. I really liked it.
