When making my recipe you don't have an Instant Pot you can use your stove top to brown the chicken and make the roux. Then just place the ingredients into a slow cooker to finish cooking it. It will still be delicious, you will just have an extra pot to wash. In fact, the original recipe from Betty Crocker, has you do just that.
Since I have gotten my Instant Pot, I use it as a slow cooker whenever I have items that need to be browned prior to being placed in the crock pot. It is one of my favorite features of the Instant Pot preceded only by the fact that I can place frozen food into the Instant Pot and still have dinner ready and on the table in an hour. This Instant Pot Goulash saved me last month when I didn't have a clue what to serve for dinner.

Chicken and Sausage Gumbo

This delicious, warm, spicy Gumbo is made in an Instant Pot, first using the saute setting and then switching to the slow cook setting. Served over rice it makes a complete, nutritious and satisfying dinner.
ingredients:
- 1 T. olive oil
- 2 lbs. boneless, skinless chicken thighs
- salt and pepper, to taste
- 1 stick butter
- 1/2 c. flour
- 1 lg. Vidalia onion, chopped
- 2 stalks celery, chopped
- 2 bell peppers, chopped
- 4 cloves garlic, minced
- 1 (32 oz) carton chicken broth
- 1 (12 oz) pkg. frozen cut okra
- 1 lb. smoked sausage, cut into 1/2" slices
- 2 t. creole seasoning
- 2 bay leaves
- Cooked Rice for serving

How to cook Chicken and Sausage Gumbo
- Set the Instant Pot to saute setting and add the olive oil. Season the chicken with salt and pepper. When saute setting is reached and oil is hot, add the chicken and brown on both sides. Remove to a plate and set aside.
- Add the butter to the Instant Pot, still on saute setting. When melted add the flour and cook, stirring constantly, until chocolate colored and fragrant. Add the onions, garlic and peppers. Stir to coat and cook about 3-4 minutes longer.
- Adjust the Instant Pot setting to Slow Cooker. Stir in the broth, okra, sausage, Creole seasoning, and bay leaves. Add the chicken. Stir to combine, cover and cook for 4 hrs.
- Remove chicken pieces, shred and return to pot to reheat. Discard the bay leaves. Serve Gumbo over hot rice.

I actually have a slow cooker with and insert that can go on the stove top! I have yet to try the slow cooker in my Instant Pot, but now I'm inspired. I love gumbo!
