I have visited Puerto Rico a number of times. On my first visit there they were having elections to become a US Territory. They were so very excited about it and each American I spoke to was excited to have them as part of our country. I felt so badly for them when they suffered such tremendous tragedy and received so little assistance from our current governmental administration. I often wonder if they are kicking themselves for the desire they had to belong to this great nation who turned their back on them in their time of need.
Okay, I'll get off my soapbox now. Puerto Rican cuisine is a wonderful conglomeration of Spanish, African, Taino and American influences with a Caribbean feel. Chicken and Pork are widely eaten and these skewers, called Pinchos, can be made with either. They are grilled and sold as street fare and they are delicious.
I removed mine from the skewers and served it up as table fare paired with Caribbean Black Beans and Rice and a Kale slaw. Delicious!!!
Yield: 8 Servings
Pinchos
White meat chicken, tossed in adobo seasoning, grilled to juicy tenderness and drenched in barbecue sauce. These skewers are called Pinchos and are common street food in Puerto Rico.
prep time: 10 Mcook time: 25 Mtotal time: 35 M
ingredients:
- 3-4 lbs boneless, skinless chicken breasts, trimmed and cut into chunks
- 2 T. adobo seasoning
- 3 t. oregano
- BBQ sauce, your favorite brand or homemade
instructions:
How to cook Pinchos
- Toss the chicken with the adobo seasoning and oregano. Thread onto metal skewers and cook over medium high heat, turning often until an internal temperature of 150* is reached.
- Brush with BBQ sauce and continue cooking and turning until temperature reaches 165* and sauce is caramelized.
