Dark chocolate cupcakes baked in a wafer cone and topped with whipped cream and sprinkles. What a great way to celebrate the first day of school.
The From our Dinner Table group is posting Back to School Recipes today. We just came off of Back to School Treats week where I shared a lot of fun recipes including Chocolate Malt Waffles, a Caramel Apple Smoothie, Almond Shortbread and Rainbow Sprinkle Pancakes.
But that was just the icing on the cake....these cupcake cone cakes that is, because I save the best for last. But before I tell you just how quick and easy these treats are let's look at what the others are sharing today.

I remember my mom making these for me when I was a kid and how much I loved them. I, in turn, made them for my kids. They are super easy to make and my granddaughter and new teen love them just as much as I and my older kids did.
Start by covering a cupcake tin with foil. Cut a small slice in each so that you can open it up and snug a wafer cone into each well.
Make a box cake mix per package directions and fill each of the 12 cones about halfway full. I used my regular size muffin scoop. Bake until cake has risen to the top and a skewer inserted into the center removes cleanly, about 20 minutes.
Remove from the oven and let cool completely. They are easily frosted and served up in the same pan and the foil catches any frosting or sprinkles that spill.
I ended up with 16 cupcake cones in all, using 1 standard box of mix. You can use your favorite frosting. I chose to just whip up some heavy cream and add some sprinkles. You could even use pressurized canned whipped cream to make these even easier.

Cupcake Cones
Delight your youngsters when they return home from the first day of school by surprising them with these fun and tasty cupcake cones.

ingredients:
- 1 box cake mix + ingredients listed on back of box
- 16 wafer ice cream cones
- 1 pt. heavy cream
- 1 T. powdered sugar
- sprinkles of choice
instructions:
How to cook Cupcake Cones
- Prepare the cake mix per package directions
- Cover a 12 cup and 6 cup muffin pan with aluminum foil. Cut a small slit in the foil over each cup indentation. Place 16 wafer cones into the cups of the tins, snugging them into the foil to prevent tipping.
- Fill each cone approximately half full with the prepared batter. Bake in a preheated 350* oven for about 20 minutes, until cake fills the cone and a skewer inserted removes cleanly.
- Remove from oven and let cool completely.
- In small bowl of stand mixer, fitted with the whisk attachment, beat the cream and sugar until the consistency of frosting. Using a pastry bag, decorate the cones with the whipped cream and cover with sprinkles. Refrigerate until serving.
