Welcome to Day 2 of Blueberry Week.........
A large group of us are sharing Blueberry recipes all week long. Yesterday I shared a wonderful Grilled Chicken Salad topped with a Blueberry Vinaigrette . Today I am sharing a cold, refreshing cocktail that you are sure to love but before that let's take a look at what the others are sharing today.

What an amazing line up for today. I can't wait to find a few extra minutes to peruse all the recipes. Perhaps I will whip up another pitcher of these Blueberry Thyme Smashes to sip on while I read.
It's easy enough to do. Just boil some blueberries and some sprigs of thyme with sugar and water, until the blueberries start to burst and the sugar is dissolved.
Remove the thyme sprigs and transfer to a pitcher to cool. When at room temperature add the liquor and freshly squeezed lemon juice. Mix together and pour into a glass that has been filled with ice.
When cooking, you are going to smash the berries but you don't strain the simple syrup afterwards. You simply add the liquor and fruit juice, that's what makes it a smash.

Blueberry Thyme Tequila Smash
This Smash cocktail is a simple concoction of liquor, fruit, sugar and thyme. It is perfect for enjoying during these dog days of summer.
ingredients:
- 6 oz. blueberries (12 set aside for garnish)
- 3/4 c. water
- 3/4 c. sugar
- 6 sprigs thyme (4 set aside for garnish)
- 1 c. tequila, I used Patron
- juice of 2 lemons (about 1/2 cup)

How to cook Blueberry Thyme Tequila Smash
- Place the blueberries, water, sugar and 2 sprigs thyme into a sauce pan. Bring to a boil over high heat. Reduce heat and simmer for about 10 minutes, until sugar is dissolved and the blueberries are bursting. Using the back of a wooden spoon, mash and berries that are still whole.
- Remove thyme sprigs and pour into a pitcher. Cool to room temperature.
- While mixture is cooling, thread 3 blueberries onto each of the remaining thyme sprigs. Set aside.
- Stir the tequila and lemon juice into the blueberry mixture. Fill 4 glasses with ice and divide the mixture between them. Garnish with the blueberry speared thyme sprigs.
