Turneric Shrimp with Mango Salsa #CrazyIngredientChallenge #FantasticalFoodFight

Crazy Ingredient Challenge is a group that meets on the 20th of each month.   Bloggers are given two ingredients and challenged to make a new and original recipe to share.  This month's ingredients were Mango and Turmeric.


Fantastical Food Fight also meets once a month and bloggers are given a theme or ingredient and challenged to make a dish featuring the theme/ingrdient.  This month's theme was Seafood and posts are always due on the third Wednesday of each month.


I was very happy when the themes for each were compatible this month since the third Wednesday is also the 20th.  Being able to combine these two events made my life, which has been exceptionally crazy lately, a little less so.


I served this platter up as an appetizer on a Monday night when we had the Angel Face.  My sister brought over her granddaughter and my brother brought over his grandson for a play date in the pool and dinner.


Frank and my brother, Dick, played in the pool with Melody and Carter, while Jackie and I escaped into the air conditioning for a moment.  It was this past Monday and the temperature was 97* out there!  My sister, Dawn, hadn't arrived yet as Aurora had taken a late nap.

I tossed the shrimp with some turmeric, cumin, salt and pepper and let it set for a few minutes while I cut up the ingredients for the salsa.


I knew that my salsa had to contain mango.  I combined that with some fresh pineapple, added some red bell pepper and some mint for color and tossed it all together with lime juice.  Then I let that sit so the flavors could marry while I cooked the shrimp.



The entire process took no more than 10 minutes and we were back out on the deck.  Only long enough to enjoy some of these delicious shrimp and gorgeous salsa before hopping back into the pool.  Did I mention that it was HOT outside??!!!!

Dawn arrived while there was still some shrimp left and was happy that she did.  This was the perfect start to a wonderful evening with loved ones.

Turmeric Shrimp with Mango Salsa

prep time: 15 minscook time: 5 minstotal time: 20 mins
Succulent, tender shrimp lightly spiced with turmeric and cumin are quickly stir fried and served with a flavorful, bright mango salsa.

ingredients:

1 lb raw shrimp, peeled and deveined, tails left intact
1/2 t. turmeric
1/4 t. cumin
salt and pepper to taste
2 t. olive oil
1/2 of a fresh mango, peeled and diced
1/3 of a fresh pineapple, peeled, cored and diced
1/2 of a small, red bell pepper, seeded and diced
6-7 mint leaves, minced
juice of 1 small lime
salt to taste
dash of cayenne pepper

instructions:

Toss the shrimp with the turmeric, cumin, salt and pepper.  Set aside.

Toss the mango, pineapple, red bell pepper, and mint with the lime juice.  Add a sprinkle of salt and a dash of cayenne pepper.  Toss again.  Place into a serving bowl.  Set aside.

Heat the oil in a wok or large skillet.  When hot, add the shrimp.  Cook and stir until shrimp is pink and just cooked through, about 2-3 minutes.  Transfer to a serving platter and serve with the salsa.

  2. This reminds me a little of that delicious mango shrimp cocktail I made from your blog for SRC that is so delicious, only with turmeric. I love this flavor combination! I have a Malaysian shrimp stir fry recipe, and the combo is fabulous. Awesome recipe!

    1. Thanks Karen. It is similar to the spicy shrimp. I had forgotten about that. This was not as spicy but still just as delicious.
