Peachy Lemonade for #Foodie Extravaganza

Today we are celebrating Lemonade with all of the Foodie Extravaganza gang.  Each month one of us volunteers to host this party.  Hosting means you get to go over to The Nibble  and choose which food you want to celebrate that month.  This month our friend, Lauren, of  Sew You Think You Can Cook, is hosting.

If you are a blogger and would like to join our group and blog along with us, come join our Facebook page Foodie Extravaganza. We would love to have you! If you’re a spectator looking for delicious tid-bits check out our Foodie Extravaganza Pinterest Board! Looking for our previous parties? Check them out HERE.

The lemonade I have chosen to share with you is a real peach!! Peach, Strawberry and Lemons combine to give you a fruity refreshig treat on these hot summer days.

Those of you who have been following my blog know that I have started a new eating plan based on the Fast Metabolism Diet by Haylie Pomroy.  The nice thing about this lemonade is that it is compatible with Phase 1 and Phase 3 of the eating plan.  That means I can enjoy it 5 days of the week.

I adapted this recipe from one that Haylie shared on her website.  I didn't adapt the ingredients too much other than halving the recipe so it only made 6 servings and using organic agave syrup in place of the xylitol. Xylitol and Stevia do not seem to agree with me so I am substituting the agave when I need a sweetner.  It is also plant based and low glycemic.  So while it is not approved by Haylie I can't see as to where it will affect the eating plan negatively.

I used half the fruit called for in the original recipe and I cooked the strawberries down along with the peaches in the water and sweetener mixture.

Mostly, I changed up Haylie's techniques and procedures.  I am posting my recipe as I made it.  You can link to Haylie's recipe above if you want to stick to her tried and true methods and recipe.

Haylie had you puree the fruit mixture in a blender, allow it to cool and then force it through cheesecloth.  I just put the hot fruits and liquid into my food mill, using the seeding disk.  I placed the food mill over my large measuring cup.  When I was done I had 3 cups of juice.

I squeezed my lemons right into a mason jar.  2 lemons gave me 1/2 cup of juice.  I added the peach mixture to the mason jar and placed it in the refrigerator.

When you are ready to assemble the lemonade you simply fill a tall glass with ice, add 1/2 c. of the fruit mixture and top it off with sparkling water.

This is another one of the recipes that will remain in my repertoire even after the eating plan is over.
I might even add a splash of  vodka to the mix....perhaps cherry flavored.

Peachy Lemonade
adapted from Haylie Pomroy

1 c. water
1 peach, roughly chopped (about 1 c.)
5 strawberries, hulled and sliced (about 1/2 c.)
1/3 c. organic agave syrup
2 lemons, juiced (about 1/2 c.)
Sparkling Mineral Water

Place water, peaches, strawberries and syrup into a medium saucepan over med high heat.  Bring to a boil, reduce heat and simmer 3 or 4 minutes.  Pour into a food mill, fitted with the seeding strainer, set over a bowl.  Strain the fruit and syrup through the food mill.  Set aside

Pour the lemon juice into a container, I used a mason jar.  Add the peach mixture to the lemon juice and refrigerate until completely chilled.

When ready to serve fill a tall glass with ice, add 1/2 c. of the fruit mixture, top with sparkling water. Garnish with peach slices and strawberries if desired.  Print Recipe

  7. This sounds so good. I've never used agave before and not sure where I would get it, but I love the peaches and strawberries you added in.

    1. It is found by the sugar in your local grocers. You could easily substitute honey.

  8. Great flavors. And I approve of your substitution with agave - you do what you need to do. I'm glad you can have a glass of this great lemonade during your eating challenge.
