Laura chose beverages for the theme this month. We were instructed to make a Bundt based on our favorite beverage. For some reason a Cabernet Sauvignon cake did not appeal to my husband, mostly because I thought I would put some blue cheese in it. Yep, Frank nixed that idea right away. So back to the drawing board. I sat down with a glass of cider from our trip to the apple orchard last week and.....Hey, apple cider......I love apple cider in the Fall. My choice was made.
I mixed up my batter, took a taste and did a fist pump!! I was very pleased with the batter, now if it just baked up as good as I was hoping I would be all set.
It came out looking gorgeous. A beautiful golden cake with bits of apples peeking through. And the smell.....oh my goodness....if there is anything better than the smell of apples and cinnamon I just don't know what it is!
So far so good, now to let it cool for a bit and then hold my breath while I turn it out onto the cooling rack to finish cooling completely before the glaze.
It looks delicious. It smells delicious. Now we just have to wait and see how it tastes............
Moist, tender and delicious with the bright taste of apples throughout. This cake is destined to become a new Fall Favorite.
2 c. flour
1 1/2 c. sugar
1 t. baking powder
1 t. baking soda
1 t. ground cinnamon
1 c. apple cider
1 stick butter, softened
1/2 t. vanilla
2 eggs
2 apples, peeled and diced
Glaze
2 T. butter, melted
1 c. powdered sugar
1/8 t. cinnamon
1 T. apple cider
Place dry ingredients into the large bowl of a stand mixer fitted with the paddle attachment. Turn speed to the lowest setting to combine. Add the apple cider at low speed until all ingredients are moistened. Add the butter and vanilla and beat on med high speed for a couple of minutes. Add the eggs and continue to beat for a couple minutes longer. Fold in the apples. Pour into a Bundt pan that has been liberally coated with baking spray. Bake in a preheated 350* oven for 40-45 minutes, until a skewer inserted in the center removes cleanly. Let cool in the pan for 10 minutes before turning onto a cooling rack and allowing to cool completely.
Mix together the butter, powdered sugar, cinnamon and apple cider in a small bowl until smooth. Drizzle glaze over cooled cake. Print Recipe

DeleteI was right with you for the Cabernet cake until you mentioned the blue cheese. :) I love wine cakes though and would have considered that if I'd thought of it. You did, however, make an awesome choice, especially now as the leaves are changing. It looks fantastic.

ReplyDeleteHahahaha! I would TOTALLY read a blog called baking in a moomoo!!! I cracked up thinking about a blue cheese cabernet cake too! I had a similar thought about a whiskey cake but decided I'd rather just drink the whiskey and use the butter and flour for something else!
