Labor Day is often the final picnic get together for the year so I chose to share my coleslaw recipe because after all what is a picnic without coleslaw? I use my food processor to make light work of this salad but if you don't have a food processor or you want to relax even more than that you can always pick up a bag of shredded coleslaw mix and just add the homemade dressing. No one will be the wiser, I promise.
Easy Peasy Cole Slaw
1 head cabbage, shredded
2 carrots, shredded
1 green pepper, shredded
3/4 c. Miracle Whip or Mayonnaise
1/4 c. apple cider vinegar
juice from half a lemon
2 t. sugar
salt and pepper to taste
Place Miracle Whip, vinegar, lemon, sugar, salt and pepper into a clean jar with a lid and shake it up until combined. Place shredded vegetables into a large bowl. Pour dressing onto vegetables and toss until well coated. Chill well, covered, before serving. Print Recipe
