Caramelized Pineapple Tropical Cake #CakeSliceBakers

This easy one pan cake is chock full of pineapple and toasted caramel.  It is the perfect ending to your Summer Luau.

I decided on the Caramelized Pineapple Tropical Cake, baking it in an 8" square pan instead of a loaf pan.

This was a wonderful ending to a poolside dinner with friends.  I included a scoop of ice cream for those who wished.  A dollop of whipped cream would be nice as well or you can sprinkle the top with powdered sugar as suggested in the cookbook.

Caramelized Pineapple Tropical Cake

Caramelized Pineapple Tropical Cake

Ingredients

  • 10 1/2 T. unsalted butter, divided
  • 2 T. brown sugar
  • 1 c. pineapple, peeled, cored and diced
  • 1 T. dark rum
  • zest of 2 limes, grated
  • 1 c. powdered sugar + more for dusting, if desired
  • 1 T. honey
  • 1/4 c. sugar
  • 3 eggs
  • 2 T. 1/2 and 1/2
  • 1 1/2 c. cake flour
  • 2 t. baking powder
  • pinch of salt
  • 1 c. dried, flaked coconut

Instructions

  1. Place the coconut onto a sheet pan and place into a preheated 350* oven for 5 minutes, shaking the pan about halfway through cooking time. Remove from oven and set aside.
  2. Melt 2 Tablespoons of the butter in a large skillet over medium heat. Add the pineapple and brown sugar. Cook until sugar is melted and caramelized and the pineapple is browned a bit. Remove from heat, stir in the rum and zest. Set aside.
  3. In large bowl of stand mixer, fitted with the paddle attachment, cream together the butter and powdered sugar until fluffy. Stir in the honey and sugar. Add the eggs, one at a time, beating well after each. Mix in the cream, beating until mixture is smooth.
  4. With mixer on low, fold in the flour, baking soda and salt until incorporated.
  5. Stir in the reserved pineapple and coconut.
  6. Spread into an 8" square cake pan that has been treated with baking spray and place into the preheated 350* oven. Bake for 40-50 minutes, until a skewer inserted removes cleanly.
  7. Let cool completely and dust with additional powdered sugar, if desired.
