If you want an early morning laugh, just ask my husband to make you one of his Fantastic Margaritas at 6:30 in the morning as he is pouring coffee. "Right now?" he asks to which I replied that I had already been up for over an hour.
He shook his head at me and complied, as he always does. He quit trying to figure me out years ago!!
I poured that Margarita into a shallow bowl and started dipping some lady fingers into it and placing them on the bottom of a 9x13" baking pan. Then I spread a layer of Mascarpone and Cream Cheese flavored with lemon pudding and lime juice and topped it with more of those Margarita soaked Cookies.
Another layer of the pudding, a smattering of freshly zested lime and into the refrigerator it went until it was time to head to our daughter's party.
I made a large pan of this scrumptious dessert because I wanted to serve about 15 people. You can halve the recipe and use an 8 or 9" square pan with excellent results for smaller crowds.

Margarita Tiramisu

Ingredients
- 1 (16 oz) carton Mascarpone cheese
- 2 (8 oz) pkgs. cream cheese
- juice of 1 lime
- 2 (4 serving) pkgs instant lemon pudding mix
- 2 c. milk
- 1 Margarita (our recipe)
- 36 Ladyfinger cookies
- zest of 1 lime, for garnish, if desired
Instructions
- In large bowl of stand mixer, beat the mascarpone, cream cheese, lime juice and pudding mix together until combined.
- Reduced speed and slowly mix in the milk until incorporated. Increase speed and beat until combined. Set aside
- Place the margarita in a shallow bowl. Dip half of the cookies in the mix and place on the bottom of a 9x13" baking pan that has been treated with baking spray. You can turn and break the cookies to make them fit.
- Spread half of the pudding mixture over the cookies and then layer the remaining cookies on top. Spread with the remaining pudding mixture, garnish with lime zest, if desired.
- Refrigerate at least 4 hours or up to one day before serving.
