I baked this cake in a 9x13" pan, frosted it with Amy's Cream Cheese Frosting and decorated it with sprinkles. It was a joyful, happy day in our lives.
Served up with ice cream it was a wonderful finish to dinner and a great segue into the opening of gifts.

Yellow Cake
This simple but delicious yellow cake made the perfect birthday cake.
Prep time: 10 MinCook time: 45 MinTotal time: 55 Min
Ingredients
- 1 stick butter, room temperature
- 1/2 c. canola oil
- 2 1/4 c. sugar
- 1 T. vanilla
- 4 eggs, room temperature
- 5 egg yolks, room temperature
- 2 2/3 c. flour
- 2 1/2 t. baking powder
- pinch of kosher salt
- 1/2 c. light cream
- 1/2 c. sour cream, room temperature
Instructions
- In large bowl of stand mixer, fitted with the paddle attachment, beat the butter until creamy and smooth.
- Reduce speed to medium and add the oil, sugar and vanilla. Beat for about 5 minutes, until light yellow and doubled in volume.
- Reduce speed to medium low and add the eggs and yolks, one at a time, mixing well after each.
- Whisk together the flour, baking powder, and salt. Set aside.
- Whisk together the milk and sour cream. Set aside.
- Add 1/3 of the flour mixture to the butter mixture and mix until incorporated. Add half the milk and mix until combined. Continue with another third of the flour, remaining milk and the remaining flour. Scraping the bowl as needed.
- Pour the batter into a 9x13" pan that has been treated with baking spray and bake in a preheated 350* oven for about 45 minutes, until a tester inserted in the center removes cleanly.
- Let cool completely in pan and frost with desired frosting and garnishes.
