- 1 lb. pasta of choice, cooked al dente per instructions on package
- 1 T. olive oil
- 8 oz. sliced mushrooms
- 1 lb. large raw shrimp, peeled and deveined
- 1 1/2 c. sparkling wine
- zest and juice of 1 lemon
- 1 shallot, finely diced
- 4 cloves garlic, minced
- 4 Roma tomatoes, seeded and diced
- 1 c. heavy cream
- salt and pepper, to taste
- Parmesan cheese to sprinkle
- Heat oil in large skillet over medium high heat. Add the mushrooms, shallot and garlic and cook until liquid is released and mushrooms are lightly browned and tender.
- Add the shrimp and tomatoes, sprinkle with salt and pepper. Cook for a minute or two, remove shrimp and then add the wine and lemon juice. Bring to a boil and cook until liquid is reduced to about 1/2 cup, about 10 minutes. Stir in the cream and cook for a minute or two, until slightly thickened.
- Return the shrimp and mushrooms to the skillet and toss to coat and warm through.
- Place the pasta into a serving bowl and top with the shrimp and sauce, tossing to coat and warm the pasta. Sprinkle with parmesan cheese and lemon zest and serve.
