This soup, chock full of shrimp, vegetables and ramen noodles, without the addition of the seasoning packets, is healthy and nutritious not to mention scrumptious.

I always have a bag of shrimp in the freezer. Guests come over, pull it out, run it under cold water for a few minutes, add some cocktail sauce and you have appetizers. In this case, I had forgotten to take anything out for dinner before a day of running errands. We came home tired and hungry and the Teen needed to leave for work in an hour.
I opened the freezer, pulled out the shrimp and set it in a colander under cold running water. Went into the refrigerator and pulled out some sliced mushrooms, a carrot and the ginger paste. Into the pantry to grab some vegetable stock, garlic, soy sauce and those little ramen noodle packets that the Teen loves.
Dinner was on the table in no time. I would have scattered some scallions on top of the soup had I had any in the refrigerator for some added color and flavor but I don't think Frank or the Teen missed it at all.
Speaking of the Teen, she graduated high school a semester early right before Christmas break and started her first college course ahead of the rest of the class. We are very proud of her and are celebrating her accomplishments with a party on Sunday. The rest of the week is pretty quiet until Friday evening when Frank and I are going to a dinner show featuring The 4 Tenors. Looking forward to that.
