Snickerdoodle Muffins

Snickerdoodle Muffins

All the flavors of a snickerdoodle cookie in muffin form.
Prep time: 5 MinCook time: 15 MinTotal time: 20 Min

Ingredients

  • 1 stick butter, room temperature
  • 2/3 c. sugar
  • 1 egg
  • 1 1/2 t. vanilla
  • 1/2 c. milk
  • 1/2 c. sour cream
  • 1 2/3 c. flour
  • 1 1/2 t. baking soda
  • 1/2 t. cinnamon
  • pinch of salt
  • 1 T. butter, melted
  • cinnamon sugar for sprinkling

Instructions

  1. Cream together the butter and sugar until light and fluffy. Add the egg, beating well. Stir in the milk, vanilla and sour cream. Set aside.
  2. Sift together the flour, baking powder, baking soda, cinnamon and salt in a bowl. Make a well in the center and pour the reserved liquid ingredients into the well. Mix with a wooden spoon just until combined.
  3. Divide between 12 muffin cups that have been treated with baking spray.
  4. Bake in a preheated 375 degree oven for about 15 minutes, until a skewer inserted removes cleanly.
  5. Let cool slightly, remove from pan onto a wire rack. Brush with the melted butter and sprinkle with cinnamon sugar.

  1. You can't go wrong with the flavors of snickerdoodles! I'm sure these didn't last long either. I am imagining them warm with butter!
