If you are like me and LOVE snickerdoodles these muffins are going to start your day off with a smile.
Yield: 12 servings
Snickerdoodle Muffins
All the flavors of a snickerdoodle cookie in muffin form.
Prep time: 5 MinCook time: 15 MinTotal time: 20 Min
Ingredients
- 1 stick butter, room temperature
- 2/3 c. sugar
- 1 egg
- 1 1/2 t. vanilla
- 1/2 c. milk
- 1/2 c. sour cream
- 1 2/3 c. flour
- 1 1/2 t. baking soda
- 1/2 t. cinnamon
- pinch of salt
- 1 T. butter, melted
- cinnamon sugar for sprinkling
Instructions
- Cream together the butter and sugar until light and fluffy. Add the egg, beating well. Stir in the milk, vanilla and sour cream. Set aside.
- Sift together the flour, baking powder, baking soda, cinnamon and salt in a bowl. Make a well in the center and pour the reserved liquid ingredients into the well. Mix with a wooden spoon just until combined.
- Divide between 12 muffin cups that have been treated with baking spray.
- Bake in a preheated 375 degree oven for about 15 minutes, until a skewer inserted removes cleanly.
- Let cool slightly, remove from pan onto a wire rack. Brush with the melted butter and sprinkle with cinnamon sugar.

You can't go wrong with the flavors of snickerdoodles! I'm sure these didn't last long either. I am imagining them warm with butter!
