This dip is the perfect appetizer for any occasion. It is quick, easy, delicious and even gives you some vegetables. It is like a Cobb Salad on a cracker.

Foodie Extravaganza is a fun group that normally gets together to celebrate Food Holidays. This month our celebration is a little different. I will let our host, Stacy of Food Lust People Love, explain:

Anyhoo, this event is to celebrate the birth of baby Goehring, much wanted and hard gotten. I'll update this when he/she is born. They don't want to know before.

I adapted this recipe from one found at Lemon Tree Dwelling. The original recipe called for grilled corn....it's not corn season nor grilling season here right now so I omitted that. I also left off the blue cheese crumbles because, while I'm a huge fan, my guests may not be. I served the crumbles on the side for those who wanted them.
Cobb Dip
Ingredients
- 8 oz. cream cheese, room temperature
- 1 c. sour cream
- 1 package Hidden Valley Ranch Dip mix
- 1 c. chopped Romaine lettuce
- 1 c. chopped tomatoes, I used a variety of cherry and grape tomatoes for color.
- 1/2 c. shredded Colby Jack cheese
- 1/4 c. bacon crumbles
- 1/4 c. blue cheese crumbles, if desired
Instructions
- Place the cream cheese, sour cream and dressing mix in a food processor and pulse until combined and smooth.
- Spread into the bottom of a 9" pie plated.
- Top with the lettuce, tomatoes, shredded cheese, bacon and blue cheese, if using, and serve with crackers.
