Enfrijoladas de Pollo #SundayFunday

Happy Halloween!!! 

Have you ever tried Enfrijoladas?  In Mexico, when they have leftover frijoles (beans) and stale corn tortillas they turn them into Enfrijoladas.  They are quick easy and versatile.  You can top them with fried eggs or fill them with other leftovers.  Or you can simply sprinkle them with cheese and dig in. In this case I filled them with leftover chicken.

Sourdough Potato Bread and The Weekly Menu

Are you like me and loathe to throw away leftovers?  As the Holiday Season approaches, I spend a lot of time figuring out how to repurpose my leftovers.  This bread recipe that I'm sharing today is a perfect way to use up any leftover mashed potatoes that you may have.

Wine Wednesday with L'Ecole #Merlotme

I love October. I love when the weather starts to cool and the colors start to change.  I love pulling out the jeans and hoodies and going from gathering around the pool to gathering around the bonfire.  I love that we have lots of birthday celebrations and Halloween to enjoy.  And I love #MerlotMe and the fact that I get to represent L'Ecole Winery with not just one but two posts this month.

As an ambassador for L'Ecole wines I was sent not one, but two, Merlot wines with which to celebrate #MerlotMe.  In return for these wines I agreed to post my tasting and pairing notes during the month of October.  All opinions are strictly my own and I receive no monetary compensation for these writings.

Preparing for the Holidays

Last year the epidemic had our holidays looking very different than they had in the past.  COVID 19 is still affecting how we live our daily lives and it will, again, affect our holidays.  Fortunately, many of us are now vaccinated and able to join together for celebrations again this year.  I am very excited to be planning and hosting gatherings. I"m starting with a dinner for our neighbors to celebrate one of their birthdays on Halloween night.

 When Martin of Enofylz Wine Blog invited us to join him in discovering the wines of Anadalucia I was anxious to read his invitation post and learn more.  I discovered that the main wines of this region are sherry.

Pork and Cabbage Starting with Leftovers #Multi-CookerMonday

 On Sunday we had a birthday celebration for our eldest daughter.  I made a very fall like dinner of Roast Pork Loin and Roasted Root Vegetables.  I had planned on making a 3 lb roast but my roast but the smallest in my freezer was closer to 5 lbs.

 I thought about cutting part off to make boneless chops but it had already been frozen and I wasn't sure when I would get around to making the chops as I had a busy week looming.  I decided to roast the whole thing because then the leftovers could be frozen, if need be.

Won't you please #MerlotMe?

October is #MerlotMe month and I have been fortunate enough to be allowed to participate in this fun event for the past several years.  Merlot is a French wine grape originally from Bordeaux and one of the blending grapes used for that iconic wine.

The Weekly Menu including an Early Birthday Celebration

 As we finish out the first week of October the leaves are slowly starting to change.  Our Corn Maze outing was postponed the second weekend in a row because of rain.  We are hoping it is nice enough and dry enough on Saturday to finally take the Angel Face.  She gets to spend the night with us on Saturday either way so if we can't do the maze again we will at least go out to the pumpkin patch so we can carve pumpkins while she's here.

The Weekly Menu for the First Week of October

Holy cow.....This year is just flying by.  Can you believe it is already October 1st?  Now, I am ready for Fall....hopefully a nice, long fall, with crisp weather, gorgeous colors and hiking weather.  The snow can wait until after Thanksgiving, thank you very much.
