Molasses Roasted Pork Tenderloin #ImprovCookingChallenge #MerlotMe

Five ingredients, 30 minutes and the results are a wonderful delicious dinner.  Open up a bottle of Merlot wine and you will think you are having dinner at a fine restaurant.

Nichole of Cookaholic wife invites us each month to join her in a scaled down version of Chopped.  We are given two ingredients and sent forth to create the best recipe we can with said ingredients.  This month we were assigned Pork and Molasses.  Let's take a look at the contending recipes.......
As an ambassador for L'Ecole wines, I was sent two bottle of Merlot for tasting and pairing purposes.  All thoughts and opinions are my own and based on my palate.  I received no monetary compensation for this post.

When I decided on the recipe I was making for Improv Cooking Challenge I thought it sounded as if it would be a lovely pairing with Merlot.  I had invited our neighbors over for dinner as she had mentioned in passing that things were crazy busy at work and she was feeling overwhelmed.  

What better way to soothe a stressed out friend than a comforting dinner with a lovely glass of wine?  I put some cheesy potatoes into the slow cooker, placed a bottle of L'Ecole Merlot from Walla Walla Valley into the wine cooler and forgot about dinner until an 45 minutes before serving.

When they arrived, Frank made cocktails while I coated the tenderloins with a Molasses Glaze and placed them in the oven.  While we sipped cocktails and visited, I opened a prepackaged chopped salad and combined the ingredients and sauteed up some corn and diced jalapenos in butter. 

Merlot Wine

Frank opened and poured the wine at the table to allow it to breathe a bit.  This wine comes from Ferguson and Seven Hills vineyards, both of which are Certified Sustainable and Salmon Safe, It was bottled in 2020 and released this year for immediate consumption.  

Molasses Roasted Pork Tenderloin

This merlot pours a deep, dark purple and smells of bonfires and fruit.  It is soft, smooth and medium bodied making it a perfect pairing for the pork roast as well as the rest of the dinner.  It is still available to order online at a comfortable price point of  $36.  I think this is going to be my choice for pairing with my Thanksgiving Turkey this year.

Molasses Roasted Pork Tenderloin

Molasses Roasted Pork Tenderloin

Five ingredients, 30 minutes and the results are a wonderful delicious dinner.
Prep time: 5 MinCook time: 25 MinTotal time: 30 Min

Ingredients

  • 2 T. molasses
  • 2 T. brown sugar
  • juice of 1/2 lemon
  • salt and pepper, to taste
  • 2 pork tenderloin, trimmed and silver skin removed
  • 1/4 c. chicken broth

Instructions

  1. Place the tenderloins into a roasting pan.  Combine the molasses, brown sugar, lemon juice, salt and pepper and pour over the tenderloins, turning to coat.  
  2. Roast in a preheated 450* oven for 20 minutes, turning halfway through the cooking time.  Remove from oven to a cutting board and tent with foil to rest.
  3. Pour the drippings from the pan into a small saucepan. Stir in the chicken broth and bring to a boil over high heat.  Reduce heat to medium and let simmer until thickened, about 5 minutes.  
  4. Slice the tenderloin and drizzle with the sauce before serving.

  2. That looks like a fabulous wine pairing! And it reminds me that I haven't had pork tenderloin recently. I'll have to fix that soon. Thanks for the inspiration.
