February is normally a busy and happy month here on the Farm. It often is the month that we go on dive trips......Last year we went to Cozumel and had a great time with family and friends.....
One year later.....we are now getting vaccinated for the virus, restaurants in Michigan are allowed to open to 25% capacity, schools are open for those who choose to attend face to face instead of virtually and the numbers are going down....it has been a long trying year....but we are finally seeing a light at the end of the tunnel.
This photo was taken at the end of February. Here on the farm at the beginning of February life is still pretty chaotic. Frank is recovering nicely from his stroke and brain bleed. It is going to be a long slow road but I think we are finally traveling downhill.
The upcoming week is filled with therapy, doc appointments and more tests. Thus far they have been unable to determine what caused Frank's BP to skyrocket as it did. All tests were negative which means that they were really positive....other than the BP, Frank is very healthy!!
The BP is being controlled by meds and I am doing my part by trying to feed us less sodium and sticking to the DASH diet which is a combination of Heart Healthy and Meditteranean Diet. We go this week for another CT scan to make sure that the blood on the brain is dissolving as required and that there are no other changes.
This first week of February is pretty quiet but then....Nicole's birthday is on the 7th, Chinese New Year is on the 12th. Valentine's Day is on the 14th. Mardi Gras is February 16th. That starts the begining of our Lenten Season. So starting on that date you will be ssing an additional change to the Weekly Menu. There is no dive trip on the calendar so it's going to be a little quieter than a normal February.
With the restaurants re-opening, Nic only has Tuesday off but Pierre has to work in the evening so they are coming for lunch in between Franks Occupational and Physical therapy sessions. We will have our Taco Tuesday Dinner for Lunch followed by a birthday cake for Nicole and then probably just snack on leftovers for dinner that evening.
So here is our Weekly Menu....it is subject to change...as always.

Pasta with Pork Braised in Red Wine

Soboro Don (Japanese Chicken and Rice Bowl)
Meatless Monday

God bless you and Frank. Things will get better and then you both can take a beautiful trip but wouldn't recommend diving. My SCBA was revoked after open heart surgery but seem to be controlling my BP with Hytrin. Peace be with you and yours.
ReplyDeleteYes, I don't think a Scuba trip is going to happen this year but the doctors think that once the BP is controlled and stable he should be able to get back to scuba in the future.
DeletePrayers for continued healing for Frank. Take good care of yourself. Your menu this week looks delicious
ReplyDeleteThanks Cathy.
