Coffee Rubbed Pork with Autumn Spices #FallFlavors

Take 5 minutes to make the rub.  Slather it on the roast.  Put it in the slow cooker.  Add a cup of broth. Cover, turn it on and walk away.  Perfect recipe.  Easy peasy and delicious.


I served it up with a sweet potato casserole that I will be sharing with you on Saturday, roasted brussels with apples and onions that will be coming later in the month and a bottle of Merlot.  What a great meal!!!

Coffee Rubbed Pork Loin with Autumn Spices

prep time: cook time: total time:
Tender, juicy pork loin encrusted with an Autumn spiced coffee and brown sugar rub then slow cooked to perfection.

ingredients:

  • 4-5 lb. boneless pork loin roast
  • 3 T. Autumn Spiced Coffee grounds
  • 1/2 c. brown sugar
  • 1/2 t. cayenne pepper
  • 1 t. garlic powder
  • salt and pepper, to taste
  • 1 c. chicken stock

instructions:

How to cook Coffee Rubbed Pork Loin with Autumn Spices

  1. In a small bowl combine the coffee grounds, brown sugar, salt, pepper, garlic powder and cayenne.  
  2. Rub the roast all over with the coffee mixture.  Place into a slow cooker.  Add the chicken stock, cover and cook on low for 6-8 hrs.
  3. Let rest for 10 minutes, before slicing.
