This event is being hosted by Sue of Palatable Pastime and Valentina of The Baking Fairy. They invited us to join them in sharing recipes in honor of Earth Day which is celebrated on this day in nearly 200 countries throughout the world.

There are many ways to celebrate Earth Day. There are festivals to raise awareness, park and road cleanups scheduled, plastic to be removed from beach and waterfronts. People plant trees, flowers and gardens. They start compost bins. Turn in their plastic bags for reusable, say no to straws at restaurants choosing to bring their own steel straw with them. This is a day of awareness. This is the day to learn and know that every little act has great impact. This is our Earth, it is our children's and grandchildren's future.
Buy local, buy from small farms that believe in raising food that is wholesome and sustainable. Raise and preserve your own food. Support small businesses. Stoop and pick up that litter instead of walking over it. Add more fruits and veggies to your diet. Adopt a road and keep it litter free, walk when you can, bike when you can, carpool when you can. All these little things add up....your great grandchildren will think of you and appreciate the efforts you made to provide them with this world that has been so good to us.

Quick Pickled Vegetables
Yield: 6 servings
prep time: 15 Mcook time: total time: 15 M
Ready in just minutes this delicious side dish is perfect for serving with Asian food or a Summer BBQ.
ingredients:
- 3/4 c. seasoned rice vinegar
- 2 T. sugar
- salt and pepper, to taste
- 2 stalks celery, cleaned and thinly sliced
- 1 lg. English Cucumber, washed and thinly sliced
- 1 c. shredded carrots
- 1 bunch scallions, white and light green parts, thinly sliced
instructions:
- Whisk together the vinegar, sugar, salt and pepper. Set aside.
- Place the cucumber, celery, carrots and scallions into a serving bowl. Pour dressing over the veggies and toss to coat. Place in the refrigerator for at least 30 minutes and up to 1 week.

I make something similar to this all summer long and love it. I've never used rice vinegar before, I'll have to try it with my next batch.

DeleteI need to try pickling vegetables. There's a restaurant we frequent and they give you little bowls of pickled veggies as an appetizer. We all love them!
