It is Muffin Monday..........
My friend, Stacy of Food Lust People Love invites us to join her in posting muffin recipes on the last Monday of each month. I join in the fun more often than not.
I love muffins. I love eating them, of course, but I also love making them. They come together quickly utilizing any ingredients you happen to have on hand. They are a great portable breakfast or snack to hand to your family as they run out the door. They are a great side dish for breakfast with fruit, for lunch with a bowl of soup or as an accompaniment for dinner. What's not to love?
These muffins were inspired by the Teen. She requested Cinnamon Toast cereal when we were grocery shopping. She ate a bowl as a snack when we got home. She ate another bowl for breakfast the following morning. Then the box sat in my cupboard, untouched for a month. I decided I better do something with it, the result? These absolutely delicious muffins that got made not once but twice this month.
My little sous chef helped to make them the first time. For some reason that first batch was much tastier than the second batch to me. The rest of the family thought they tasted exactly the same but I knew the second batch didn't have the same touch of love as the first.

Cinnamon Toast Muffins
prep time: 10 minscook time: 20 minstotal time: 30 mins
Tender light muffins made with crunchy cinnamon cereal. Warm from the oven and ready for breakfast in a little over half an hour.
ingredients:
- 1 egg
- 1/4 c. canola oil
- 1/4 c. honey
- 3/4 c. milk
- 2 t. baking powder
- pinch of salt
- 2 c. cinnamon toast cereal
- 1 c. flour
instructions:
- Whisk together the egg, milk, oil and honey.
- Place the cereal in a bag and crush with a rolling pin. Pour into a large bowl. Add flour, baking powder and salt. Stir to combine and make a well in the middle of the dry ingredients.
- Pour the milk mixture into the well and stir just until combined. Fill muffin tins that have been treated with baking spray or lined with paper cups, 3/4 full. Bake in a preheated 350* oven for 20 minutes, until a skewer inserted removes cleanly.
