Peanut Butter Bundt #BundtBakers

This moist, delicious, peanut butter cake is studded with chocolate chips and than swathed in a creamy chocolate frosting.


Bundt Bakers is celebrating it's 5th Birthday and we are going NUTS!!!!!!
Today we are celebrating 5 years of Bundts.  Our fearless leader, Stacy of Food Lust People Love, invited us to go back to the very first theme she chose.  NUTS......


The only problem is that while my husband loves nuts, he does not care for them in his baked goods.  He will turn his nose up at brownies should I dare to add nuts.  He complains, loudly, if the quick bread is studded with nutty goodness.  He absolutely prefers his cakes without nuts.


Luckily, for me, he does love peanut butter.  Especially peanut butter mixed with chocolate.  So he adored this peanut butter bundt that I'm sharing with you today.  


And so did everyone else that tasted it.  I found this recipe over at Spruce Eats.  I made it just as written and I can't think of anything that I would change.  It is a keeper.

Peanut Butter Bundt Cake

This moist, delicious, peanut butter cake is studded with chocolate chips and than swathed in a creamy chocolate frosting.
prep time: 20 mins cook time: 1 hour total time: 1 hours and 20 mins

ingredients:


2 1/4 c. flour
1 c. brown sugar
1 1/3 c. creamy peanut butter, divided
1 stick butter, room temperature
1 t. baking powder
1/2 t. baking soda
1 c. milk 
2 t. vanilla
3 eggs
2 c. semisweet chocolate chips, divided

instructions


In large bowl of stand mixer, fitted with the paddle attachment,  place the flour, both sugars, 1 cup of the peanut butter, baking powder, baking soda, milk, vanilla and eggs.  Turn the speed to low and mix until incorporated.  Turn the speed to medium and beat for a few minutes longer until batter is light and smooth.  Turn the speed to low and incorporate 1/2  cup of the chocolate chips.

Pour batter into a 12" bundt pan that has been liberally treated with baking spray.  Bake in a preheated 350* oven for about an hour, until a skewer inserted into the thickest part of the cake removes cleanly.  You may need to tent the cake with foil at the end of baking time if it is getting too browned.

Remove pan to cooling rack and let set for 10 minutes before removing from pan and allowing to cool completely.

When cake is cool, melt the remaining chocolate chips with the remaining peanut butter in a small pan over med low heat stirring until smooth.  Pour or spread the frosting over the cake in large swaths.

  3. Congrats to you on your 5th Bundt Anniversary Wendy! Wow! Has it been that long? I was so sad when the other bundt group quit. I love pb anything and can't wait to bake this bundt!

    Now if you can find a moist pb quick bread, I'll be very happy! 😀 The last one I tried was dry. My parents love pb, so I'm always on the lookout to bake different quick breads to bring over their house. I'm also looking for something real special for their anniversary next month, but my Dad doesn't like chocolate anymore! What!!!😂
