The Teen and the Little Miss sure had a great time. Little Miss flattened the biscuits for the bottom while the Teen flattened the tops and cut them out to make Jack O' Lanterns.
I spooned on the meat and cheese. The girls "smooshed" them shut and I brushed them with an egg wash and threw them in the oven for about 17 minutes.
I adapted this recipe from one found on Jolene's Recipe Journal. Jolene posted her recipe on Facebook and I immediately removed the spaghetti that was on the menu for last night and used the burger for these instead. She had originally posted this recipe in 2013. Thanks Jolene for resurrecting it. Her Jack O' Lanterns turned out much better than ours LOL.

Jack O' Lantern Taco Pockets
Filled with taco meat and cheese and sitting in a field of lettuce and tomatoes these Jack O' Lanterns are sure to scare up some fun at the dinner table.
prep time: 15 minscook time: 20 minstotal time: 35 mins
ingredients:
1 lb. ground beef
1/4 c. onion, finely diced
1/4 c. taco seasoning
2/3 c. water
1 c. shredded Colby Jack Cheese
2 (8 ct) cans large biscuits
1 egg, beaten
1/2 head romaine lettuce, chopped (if desired)
1 tomato, diced (if desired)
Sour cream for serving (if desired)
instructions
Brown the ground beef with the onion in a large skillet over med high heat. Drain and sprinkle with taco seasoning. Add the water and simmer until water is absorbed.
Flatten 8 biscuits and place them on 2 baking sheets that have been lined with parchment paper or a silicone mat. Divide the meat and cheese between the eight flattened biscuits.
Flatten 8 more biscuits and use a small paring knife to cut out a Jack O' Lantern pattern. Discard the scraps. Press the Jack O' Lantern tops over the meat and cheese and press to seal around the edges of the bottom biscuit. Brush with the beaten egg.
Bake in a preheated 350* oven for 15-20 minutes, until biscuits are cooked through. Serve on a field of greens and a dollop of sour cream, if desired.

DeleteWhat a perfect dinner for Halloween! We had to wait until the end of trick-or-treating to eat, as the neighborhood was full of kids in great costumes and we were giving out candy every few minutes.
