So I threw on my lei and grass skirt and got baking.
I grabbed some pineapple, coconut and rum. And then for the heck of it I grabbed some coconut baking emulsion I had in the cupboard. In case that wasn't tropical enough I added a package of coconut cream pudding mix.
Starting with a boxed cake mix made the entire process easy peasy. While it was still warm from the oven, I drizzled it with a pineapple glaze and let it soak on in.
Let it cool completely and then added a second glaze made of cream, coconut emulsion and rum. A sprinkling of sweetened coconut for good measure and this cake was ready to be served.
One bite of this cake and you are transported to a beach on a Caribbean Island, Pina Colada in hand and the surf splashing in the backgrounds.

Pineapple Coconut Bundt Cake

All the Tropical Flavors of a Pina Colada in a Bundt Pan. This moist, delicious cake with just a hint of rum is sure to be a success at your next Luau or Island Party.
ingredients:
1 pkg. White Cake Mix
1 (3 oz) pkg. Coconut Cream Instant Pudding
1 c. canola oil
3/4 c. water
2 eggs
1/4 c. rum
1 c. drained crushed pineapple, juice reserved
2 c. powdered sugar, divided
2 T. reserved pineapple juice
1/4 c. heavy cream
1 t. coconut baking emulsion
1 T. Rum
1/4 c. sweetened, shredded coconut
instructions:
In large bowl of stand mixer, fitted with paddle attachment, combine the cake mix, pudding mix, oil, water, rum and eggs. Stir in the pineapple. Pour into a bundt pan that has been treated with baking spray. Bake in a preheated 350* oven for 45-50 minutes or until a skewer inserted removes cleanly.
Remove from oven and place, in pan, on wire rack. Combine 1 cup of the powdered sugar with the reserved pineapple juice. Drizzle over the warm cake in the pan, allowing the mixture to soak into the cake. Let set in the pan for 15-20 minutes. Turn out onto a cooling rack and let cool completely.
Combine the cream, coconut emulsion and 1 Tablespoon of rum with the remaining powdered sugar until smooth. Place the cooled cake on the rack over a baking pan covered with parchment or a silicone mat and drizzle with the icing. Sprinkle with shredded coconut. Transfer to a cake plate and serve.
