Asparagus Caprese
This delicious recipe makes a perfect side dish for a Brunch Buffet. Roasted Asparagus smothered in Mozzarella Cheese before being topped with Roasted Cherry Tomatoes. Caprese has never tasted so good!
Ingredients
- 1 lb. asparagus, hard, woody stems snapped off
- Olive oil
- Italian Seasoning, to taste
- Salt and Pepper, to taste
- 2 c. shredded Mozzarella cheese
- 12 oz. cherry tomatoes
Instructions
- Toss the asparagus with olive oil, Italian seasoning, salt and pepper. Spread over half a sheet pan. Sprinkle with the shredded cheese.
- Place the tomatoes on the other half of the sheet pan. Drizzle with olive oil, season with salt and pepper.
- Roast in a 425* oven for about 20 minutes, until asparagus is tender, cheese is melted and tomatoes are softened.
- Arrange the asparagus on a serving platter and top with the tomatoes.
