I served this rice as a side to Thai Basil Chicken for a quick and wonderful Wok Wednesday Dinner.
It is a delightfully different take on traditional fried rice that we enjoyed very much. I think you will enjoy it too.

Pineapple Fried Rice
Delightfully different this fried rice contains fresh pineapple and sweet bell peppers for a fun take on a classic dish.
Prep time: 10 MinCook time: 10 MinTotal time: 20 Min
Ingredients
- 2 c. leftover rice, cold
- 2 T. canola oil
- 1/2 Vidalia onion, diced
- 2 cloves garlic, minced
- 1/4 t. ginger powder
- 3 mini sweet peppers, diced
- 1 1/2 c. fresh pineapple, peeled, cored, and diced
- 2 T. soy sauce
- 1 t. sesame oil
Instructions
- Heat the oil in a wok over medium heat. Add the onions, garlic, and ginger. Cook, stirring until fragrant and the onion is softening.
- Increase the heat to medium-high and add the pepper and pineapple to the wok. Cook, stirring frequently, for a few minutes until the pineapple starts to turn golden.
- Add the rice and soy sauce to the wok. Cook and stir until the rice is hot and the ingredients are well blended. Turn off the heat, stir in the sesame oil, and serve.

DeleteThis is one of those recipes that I know my mom would have just loved!!! Anything with pineapple in it was her jam!!! And the fact that this recipe uses such simple ingredients would have made her rush to make it!!!
